I have been experimenting with substituting spelt flour and soy milk for wheat flour and regular milk in recipes. So far I've done pancakes and blueberry muffins. Both have turned out quite well. A couple of kids ate up the muffins without any indication that the food tasted "different." As spelt is a ancient form of wheat, I think most recipes will work with it. My next test will be pizza dough and bread. You can get at Fresh Field's....Steve
