Are amaranth greens the same value as the amaranth grain?

I believe only the grain portion is listed in Swami since "Amaranth" is in the carb section.

The seeds are an Avoid for this Nomad; I was hoping I could eat the greens at least....

how does quinoa rate?
depending, have those sprouts instead. if beneficial

I am eating the greens, but the seeds rate well for me.

I think you could try them (pretend neutral) and see if you have a negative reaction to them.

I requested the greens be added to SWAMI in August of 1999.

The last I checked there were 162 foods that people thought were more important to add to SWAMI than amaranth greens.




You may also want to consider how other greens from the same family rate in SWAMI (Beet Greens, Spinach, Epazote)

Personally, I seem to do about the same with Beet Greens and Spinach as with Amaranth greens.  I do better with Amaranth than Epazote. (Epazote, Spinach, and Beet greens are all neutral for me)
