Sorry to have to post this whole recipe, tried to link it up w/ no luck.......
Anywho, wondering if we who can't have cottage cheese could sub that w/ sheep feta. I know chevre would prob work, but   .  I would really love to make this and make it where I can actually have it.  I would sub the corn starch w/ arrowroot, the sugar w/ VG and leave off the crust.
So, do ya think sheep feta would work?

 * Ingredients 12.3oz Extra Firm Tofu
   * 16oz (2 cups) Cottage Cheese
     (1 ½ % milk fat)
   * 2/3cup Sugar
   * 2 T Lemon Juice
   * 2 T Corn Starch
   * Pinch Salt
   * 4 Egg Whites
   * 3 T Graham Cracker Crumbs
   * 12 oz raspberries, thawed or fresh
   * 1/4 cup sugar (or other sweetener, to taste)

Directions
Preheat oven to 350º Spray bottom and sides of a 9” spring form pan with non-stick spray. Combine tofu, cottage cheese, sugar, lemon juice, corn starch, salt and egg whites in the Vita-Mix Wet Blade container. Start on variable speed # 1, quickly increase the dial to speed # 10, the flip the switch up to High for 1 minute. While the Vita-Mix is running, sprinkle the graham cracker crumbs evenly on the bottom of the pan. Slowly pour blended ingredients in to the pan. Bake on the middle rack at 350º for 1 hour.
Raspberry Coulis
Add raspberries and sugar into Wet blade container. Start variable speed #1, quickly increase the dial to #10, then flip the switch to High Speed. Process for 3 minutes on High. Serve warm or chilled.

That's what the article says too. .   Did think about how untrue that sounded as I typed it, but that's what it's called.

Italy, how about a yummy smoothie instead?  You can make it so thick that you spoon it into your mouth.  Instead of cheesecake how about a  Frozen Banana Pie - also creamy!

Vicki that sounds really good, but from my experience yest, I think even bananas are going to have to go for now. I had about 1/3 of a banana w/ almond butter and my BS got out of line again. It was 90 or more last night at bed time and 90 this morning.  
And I'm not eating sugars, but maybe the sweet potato was the night time culprit. Maybe I'll have that for lunch and stick to salad at night.

at what time of day was your BS 90? FWIU, fasting should be 80-85, altho from a little googling, I'm seeing 70-110 on some sites and under 90 on others.  So 90 might be ok, but 99 might not be. ?????  Guess it's time to get out the ol' Diabetic book. You can expect your BS to rise for a short period after eating, but not drastically unless you eat something really sugary or starchy. If it stays elevated for too long, this is where the prob comes in. I just saw where it said it should return to normal within 3 hours, but that was a quick skim. if you have time, try to read several articles after googling 'fasting blood sugar levels'.

P.S.  Jayney, I looked in the Diabetes book and on pg 24 & 25, there is some info. Doc says normal fasting glucose is between 70-110. On pg 71, he also says when you begin controlling your BS, it's not unusual to experience weight gain as the glucose is being assimilated rather than spilled out in the urine. If following BTD and exercising   vigorously, the weight gain and water retention will be temporary. It's important not to skip meals or severley cut calories as this will only encourage more weight gain.   THE END

Two questions really. Couldn't find the recipe for Frozen Banana Pie and whilst looking, came across a recipe for Easy Cream of Mushroom Soup.  One of the ingredients was '1 can of mushrooms' . I have never seen a variety of mushroom mentioned on a can - how do you decide whether they are compliant????

That'd be hard to say.........but I'd prefer to use fresh anyway. And that'a'way you know they're compliant
So Vicki...........doest thou have a good recipe for Frozen Banana Pie?  And this I should be able to have w/ compliant ingreds.  I can't do w/o dessert forever ya know.

Around here (western Canada), I've never seen a canned mushroom that was not the 'common, silverdollar' type.  They are the least expensive and most plentiful here.  So unless otherwise stated on the can, that is what I would assume.  

I would use fresh too, sooooo much better flavour!  and then you can use whichever kind you want!

Canned straw mushrooms are sometimes available in conventional grocery stores.  

Shopping at an Asian supermarket might provide you with more options; there are several varieties of fresh, dried, canned mushrooms offered.

Unless the can tells you specifically what type of mushroom it is, it's usually the 'silverdollar' type--the white button-style mushrooms you find in the produce aisle.

Try baby bellas fresh if your supermarket has them. They are delicious and can easily substitute for white mushrooms in any recipe. If they only have the big 'steak cut' style, you can cube them and use them as well.

Alia's suggestion of trying an Asian grocery is excellent as well.

Freeze bananas until  frozen (4 hours or overnight).  Blend in the blender or homogenize in Champion Juicer with any additional ingredients (blueberry, mango, pineapple juice, papaya, compliant sweetener, cocoa or carob powder, etc).  The blender will need some liquid while the Champion Juicer will not.  Spoon into individual bowls and refreeze.

As it does call for Tofu as well - you wouldn't really need that much cheese.
The problem with the Feta is that it is typically so salty. However intriguingly from the later replies, the addition of a part of a banana would tone it down a little.

Farmer Cheese would make a better sub. though - I believe it is comparable to the Feta as to BTD...
