General applicability:

Silken Tofu Scramble
Green: recipe contains only neutral or a beneficials ingredients for that type.

Ingredient list:
  • 1 Tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 small carrot grated
  • 1 small zucchini grated
  • 5 ounces silken tofu
  • salt
  • 1 Tablespoon chopped fresh parsley or basil


How to make it:
  • In a small skillet, heat oil over low heat
  • Add garlic and saute 2 minutes
  • Add carrot and cook 3 to 4 minutes
  • Add zucchini and tofu
  • With the side of a spoon, chop tofu as it warms, and stir until cooked
  • Season with salt and herbs
