Imitation Corned Beef -- And ConsommeAfter starting Eating Right, I missed Corned Beef Brisket on St. Patrick's Day. I tried to make it by looking up recipes on the Internet, but it took too long and didn't end up tasting like I wanted it to.One year, I tried a commercial brand that tasted milder than the corned beef I was used to, and it tasted pretty good. One day, by accident, I stumbled onto my own homemade version of a mild tasting imitation corned beef.I was making a salad then using the following ingredients:


General applicability:

Imitation Corned Beef -- And Consomme
Green: recipe contains only neutral or a beneficials ingredients for that type.
Yellow: recipe contains an secondary avoid ingredient that may be substituted by a more permissable one.
Orange: contains an avoid in a primary ingredient.



Ingredient list:

  • Note:
    Substitute whereever possible to suit your blood type.
  • 1 cup of kamut
  • 1 can of black beans
  • 1 can of green bean
  • 1 can of diced tomato
  • 4-pound beef brisket
  • 1-3 fresh bay leaves
  • 1/4-1/2 teaspoon Coriander seeds
  • 1/4-1/2 teaspoon Fenugreek seeds
  • 1/2 teaspoon Mustard seeds
  • 1/4-1/2 teaspoon Dill seeds
  • 1/8-14 teaspoon Cayenne
  • 1 teaspoon Sugar
  • 1 teaspoon Apple cider vinegar


How to make it:

  • THE STORY:
    I didn't want to throw away the juices (even the cooked kamut had a little bit of water), so I threw it in the crock pot with about a 4-pound beef brisket. I added a fresh bay leaf (sometimes I now use 1-3 fresh bay leaves), about 1/4-1/2 tsp. Coriander seeds, about 1/4-1/2 tsp. Fenugreek seeds, about 1/2 tsp. Mustard seeds, about 1/4-1/2 tsp. Dill seeds, about 1/8-14 tsp. Cayenne, about 1 tsp. Sugar, about 1 tsp. Apple cider vinegar. The spices are geared to your taste and can be adjusted up or down. What really makes it is the fresh bay leaf. I grew a Bay Leaf Tree. It was about 8 inches when I planted it. It has now grown to 6 feet (taller if I had let it).
    Preperation:
    I cooked the brisket in the crock pot until it was tender, about 5-6 hours. It tasted delicious and was good on sandwiches for leftovers. The defatted broth made a great consomme. Later, I discovered that I did not even need to use the juices from the vegetables and grain. I could just use water. The brisket cooked with water also makes a delicious consomme.
