Kale and Watermelon Salad

Description:
A slightly spicy, tangy and sweet Kale and ginger salad marinated in apple cider vinegar topped with watermelon and feta cheese


General applicability:

Kale and Watermelon Salad
Green: recipe contains only neutral or a beneficials ingredients for that type.

Ingredient list:
  • 2 1/2 cups kale
  • 1 cup cubed watermelon (approximately)
  • 2 TB fresh ginger
  • 2 Tb apple cider vinegar
  • 1/2 tsp wasabi powder
  • 3-4 Tb olive oil
  • Salt to taste


How to make it:
  • Remove kale leaves from stem, rinse and cut into bite size pieces.
  • Peel and cut fresh ginger into thin matchstick slivers. Add to kale.
  • Combine vinegar, oil,salt and wasabi powder then add to kale and ginger, toss and marinate at least 3 hours.
  • When ready to serve add cubed watermelon and feta cheese.
  • Options: add walnuts, fresh mint or exchange melon with grapes
