Description:
Mild, kid-friendly, turkey stir fry.


General applicability:

Lemon Turkey

Ingredient list:
  • 1 pound turkey tenderloin, thinly sliced.
  • 1 Tablespoon olive oil
  • 1 teaspoon sea salt, approx.
  • lemon juice, from half large lemon, seeds removed
  • lemon rind, from whole lemon
  • 1-2 cloves garlic, minced
  • 2 cups green beans, fresh or frozen
  • 1 teaspoon Arrowroot, mixed with 3 T cold water
  • 1-2 Tablespoons Ume Plum Vinegar


How to make it:
  • Slice turkey, and sprinkle with salt.
  • Preheat olive oil in pan, over medium heat, for a little while.
  • Once it is warm enough for the turkey to sizzle a bit when hitting the pan, lay the turkey slices in a single layer on the pan.
  • Brown for a couple minutes, flip over, then add lemon rind, lemon juice and minced garlic.
  • Cook until done. Remove from heat, retain pan and drippings for cooking green beans.
  • Cook the green beans in the same pan, with the juices, until they reach desired tenderness (cover and steam if you want them well done).
  • Add the turkey, ume vinegar, and the arrowroot water, and heat until sauce thickens.
  • If it becomes too thick, add more water.
    NOTE:
    If soy sauce is appropriate for your type, you may add it instead of, or in addition to, the ume vinegar.Serve over cooked basmati rice, or substitute any compliant rice or grain.
