Rose's Blackstrap Molasses cookies

Description: This recipe was first published in Heidi's column. It is a good molasses based cookie, especially helpful to O nonsecretors. If you choose to use chocolate chips, you can use Ghiardelli Double Chocolate chips. It makes a good snack as well as dessert. You can also substitute raisins for the chocolate chips.

General applicability:

Rose's Blackstrap Molasses cookies

Ingredient list:
  • 1-1/2 cups ghee or butter
  • 1-3/4 cups blackstrap molasses or 1 cup vegetable glycerine [or BTD compatable substitute]
  • 2 teaspoons almond extract [or BTD compatable substitute]
  • 4 eggs
  • 3 cups amaranth flour [or BTD compatable substitute]
  • 2 cups rice flour or oat flour [or BTD compatable substitute]
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 tablespoons hot water
  • 1 cup chopped walnuts (optional)
  • 2 9oz. packages Sunspire organic dark chocolate chips [or BTD compatable substitute]


How to make it:
  • Preheat oven to 350 degree.
  • If using butter, beat it in a large bowl until soft.
  • Add molasses gradually to the butter or ghee, beating in.
  • Add almond extract.
  • Add eggs, one at a time, beating well.
  • Dissolve baking soda in hot water. Add to the moist mixture.
  • In another bowl, blend the flours and salt together.
  • Gradually add flour mixture to moist mixture, beating until well mixed.
  • Stir in chocolate chips (add nuts if desired).
  • Use a heaping tablespoon of dough for each cookie, and place on nonstick cookie sheet.
  • Bake at 350 degrees for 10-12 minutes.
  • Let cool before removing.
  • They freeze beautifully, it takes just a few minutes for them to defrost.
  • Makes 6 dozens.
