Description:
This recipe is easy, nutritious and great to have in the freezer. I like to make it for new mom's or ill friends.

| | Ingredients:- 1 pound ground turkey
- 1 onion chopped
- 1 green pepper, cut in strips
- 1 cup sliced carrot
- 1/2 cup diced celery
- 3-4 cups sliced zucchini
- 4 cups cut up tomatoes or canned tomatoes
- 2 to 6 cloves chopped garlic
- 1 bay leaf
- 1 teaspoon thyme
- 1 teaspoon basil
- 1 teaspoon sea salt
- dash of pepper
- 6 cups of water or broth
- 1 cup spelt pasta (any shape you like)
- grated mozzarella cheese
How to make it:- Brown meat in a large pot.
- Add water or broth, vegetables and seasonings.
- Bring to a boil.
- Cover and simmer for 1 hour.
- When vegetables are done to your liking, add pasta.
- Simmer for about 10 minutes.
- Serve sprinkled with grated mozzarella cheese.
