Description:
A light fluffy frosting, yet very satisfying to those nonnies who miss frosted cakes.

| | Ingredients:- 2 egg whites
- 1/2 to 3/4 cup agave syrup (the original recipe called for 1 1/2 cups of sugar so, adjust to your taste)
- 1/4 teaspoon cream of tarter
- 1 teaspoon vanilla, for O's or flavor of choice for O nonnies, 1/8 teaspoon peppermint extract, 1/4 teaspoon almond extract, 1/4 teaspoon lemon extract etc.
How to make it:- Put egg whites and cream of tarter in top of double-boiler (don't put it over the hot water at this time)and beat on high speed until foamy.
- Then begin drizzling the agave syrup into the egg whites while beating.
- Once all of the agave syrup is beaten in put the top of double-boiler over the hot water in the bottom of the double-boiler. The water should not touch the bottom of the pan. Beat on high speed for 5 to 7 minutes.
- It should form stiff peeks.
- Add the flavoring, and beat 2 minutes longer.
- If you let the frosting sit the agave syrup can drain to the bottom, make sure you stir it up before you spread it on your cake.
- The stirring will not hurt the frosting.
