Teriyaki Sauce

Description:
A mild sauce for salads, stir fries.


General applicability:

Teriyaki Sauce
Green: recipe contains only neutral or a beneficials ingredients for that type.
Yellow: recipe contains an secondary avoid ingredient that may be substituted by a more permissable one.
Orange: contains an avoid in a primary ingredient.



Ingredient list:
  • 1/2 cup brown sugar [or 1/3 cup agave]
  • 5 Tablespoons wheat-free tamari sauce
  • 1 teaspoon ginger juice (see recipe below)
  • 1 slice ginger from ginger juice (see recipe below)
  • 1/4 teaspoon granulated garlic (watch for avoids)


How to make it:
  • Place all ingredients in small saucepan.
  • Simmer mixture, after it becomes heated, for 10 minutes.
  • Stir so sweetener dissolves.
  • Cool.
  • Store mixture in a jar in the refrigerator until ready to use.

    Ginger Juice:

  • Place some organic ginger cut into slices into a small saucepan (maybe 1/8 pound)
  • Add filtered or bottled water just to cover slices (maybe 1 cup).
  • Bring to a boil and let simmer for 10 minutes.
  • Set pan aside for 12 hours.
  • Bring to a boil again and let simmer for 10 minutes. Add more water if needed.
  • Set pan aside for another 12 hours.
  • Bring to a boil and let simmer for 10 minutes.
  • Add more water if needed.
  • Let mixture cool.
  • Store slices covered with water in refrigerator until needed for cooking.
  • Add more filtered water to cover slices so they don't dry out.

    Comments:

    I do it this way because I waste so much ginger trying to make ginger juice to flavor salads or stir fries. I also add ginger slices to cooking.
