Description:
Spelt & Oat Flour Pancakes (taste like buckwheat pancakes).

| | Ingredients:- 1-1/2 cups flour (1 cup spelt, 1/2 cup oat) [or BTD compliant substitute]
- 1/2 teaspoon sea salt
- 1 teaspoon baking soda
- 1 Tablespoon brown sugar [or BTD compliant substitute]
- 1 egg, beaten
- 1 cup liquid: water, juice, milk, or buttermilk diluted with water
- 1/4 cup sour cream [or soft silken tofu]
- Flavorings of choice: cardamom, nutmeg, allspice, lemon peel, or vanilla
- 2 Tablespoons applesauce, olive oil, or ghee
Optional Ingredients:
raisins, grated apple, or sliced banana
How to make it:- Preheat griddle to 400 degrees.
- Sift all dry ingredients together.
- Beat egg, add sour cream, beat again, add liquid, and sweetener.
- Add applesauce and/or oil or ghee to the wet ingredients.
- Stir the dry ingredients into the wet ones.
- Put a dollop onto the griddle.
- Turn when bubbles appear in the pancake and the edges look dry.
- These keep well refrigerated or frozen.
Comments:
- I throw a refrigerated one in my Toast-R-Oven and put jam on it for a snack.
