Description:

| | Ingredients: Sauce:
- 1 cup tahini or 2 cups cooked beans
- 1/4 cup olive oil (omit if using tahini)
- 1/2 cup water
- Juice of 2 lemons, or to taste
- 3 cloves garlic, minced or to taste
- 1 tablespoon minced fresh cilantro, or to taste
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Salt to taste
Toppings:
- 12 ounces cooked turkey breast or desired meat, diced
- 2 carrots, cleaned or peeled and grated
- 2 scallions, finely chopped
- 1 cup of sprouts (optional)
A's and O non-secretors can add:
- 2 avocados, halved and diced then scoop out with spoon
Non-secretors, AB's and O's can add:
- 1 medium tomato, chopped
Other ingredient ideas depending on type:
- slightly steamed or parboiled broccoli florettes,
- diced red bell pepper,
- grated zuccini or summer squash,
- feta,
- chopped spinach or parsley
How to make it:- If starting with uncooked skinless boneless turkey breast - slice off some pieces and cook in oil about 5 minutes per side until internal temperature of 170 degrees Fahrenheit.
- Dust with tumeric powder as it cooks, if desired.
Prepare sauce:
- Using blender, combine all ingredients to make a smooth sauce.
- Thin with additional water, as needed.
- Taste and adjust seasonings.
Serving Suggestions
- I offer each ingredient in a small bowl for each person to make their own roll-up. These can be quite messy!
- I like to mix a small amount of sauce with the turkey before serving.
- These are especially good with the nori as a wrap.
