Description:
This is a nice dish for a hot summer night. It's also good the next day as well.

Ingredient list:
  • 5 Qt water
  • 1 Tblsp salt
  • 1 Tbsp. olive oil
  • 12 oz. bite size brown rice pasta
  • 2Tblsp olive oil
  • 12 oz. sirloin steak
  • salt and pepper to taste
  • 3 Tblsp olive oil
  • 5 Tbsp lemon juice
  • 3 garlic cloves, chopped
  • 1 tsp. ground cumin
  • 1/4 chopped Italian parsley
  • 1/2 cup chopped cilantro
  • 1/2 cup basil leaves
  • 3 cups chopped kale


How to make it:
  • Bring the water to a full boil with salt and oil.
  • Add pasta and cook as directed on package. For a little more al dente cook for a little less time.
  • When pasta reaches desired doneness drain and toss with oil. Refrigerate for 2 hours.
  • Slice the beef sirloin in strips or cut in cubes about 3/4' thick.
  • Saute in oil until browned, but still pink in the center, about 4 minutes. Add salt and pepper to taste. Remove to a dish and set aside.
  • Whisk oil, garlic, lemon juice and cumin. Set aside.
  • Chop the herbs and kale.
  • Toss all the ingredients and serve.
