Traditional Jewish Cake for Rosh Hashonna and Yom Kippur; for a Sweet New Year.

- 3-1/2 cups white rice flour
- 2 cups honey (variations: 2 cups agave syrup or 1 cup sugar and 1 cup honey)
- 1 cup olive oil (or compliant oil substitute)
- 1 cup strong hot coffee (variations: tea, yerba mate or hot water)
- 3 eggs
- 2 teaspoons baking soda
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon (optional)
- 1/2 teaspoon cloves (optional)
- 1/4 teaspoon ginger (optional)
How to make it:
- Preheat oven to 325F
- Grease and flour a 9'' X 13'' pan
- In large bowl, cream honey and oil (and/or sugar, if using).
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, combine flour with sea salt and optional spices.
- In a third bowl, combine coffee (or tea), baking soda, and cream of tartar. Mixture should bubble.
- Alternate adding flour mixture and coffee mixture to the egg mixture until all are fully incorporated together.
- Pour into prepared pan and bake for 1 hour.
