“Veggiequeen’s” Get Creative! Lemon-Walnut Basic Dressing

This simple mixture is great on its own as a salad dressing or to moisten sandwich filling. With a moment’s creativity, and Blood Type compatible additions, it becomes a completely different dressing for salad, slaw, sandwich filling, protein seasoning, or marinade. The possibilities are endless. Enjoy! :)
Best Used By Blood Types:
- Type A (2 beneficials)
- Type A Non Secretor (2 beneficials)
- Type AB (2 beneficials)
- Type AB Non Secretor (2 beneficials)
- Type B (0 beneficials)
- Type B Non Secretor (1 beneficials)
- Type O (0 beneficials)
- Type O Non Secretor (1 beneficials)
- Good Seasons Cruet or salad dressing bottle with a tight cap
- Per 1 cup of prepared dressing:
- 5/8 cup organic walnut oil (I use Spectrum)
- 3/8 cup organic lemon juice, fresh-squeezed or bottled (I use Lakewood or Santa Cruz because it will keep longer than fresh in the frig)
- Optional ingredients as noted below – all organic if possible
How to make it:
- For Basic Dressing: Combine juice and oil. If you have a Good Seasons Cruet, pour in the lemon juice, going past the vinegar line and filling to the water line. Do not add any water at all. Then fill to the oil line with the walnut oil. If you are using a salad dressing bottle, measure the juice and oil per the ingredients list. You can mark lines on the bottle for the next time (try fingernail polish).
- Shake together until frothy and creamy. It will separate later in the frig just like commercial salad dressing, but is easy to shake again as the walnut oil does not solidify like olive oil.
- The Basic Dressing with bottled juice lasts a long time in the frig. Any variations using fresh juice and/or other additions should be used within a day or so.
- This is light and tasty just as is. It mixes in a jiffy so I keep this going in the frig all the time. I have 2 cruets so I can always have one in the frig while the other is in the wash! Then to Get Creative, just pour some out into a small bowl and start adding things until it tastes good to you.
- For Lettuce Salads, use Basic Dressing as is, or add cilantro, mint, or other tender herbs.
- For Grated Carrot Salad (opt. add shredded broccoli stems), add dried dill with the Basic Dressing and chill to blend flavors. Or add ground cardamom to the dressing and raisins to carrots and mix.
- For Creamy Dressings, whisk in soft silken tofu or plain Greek yogurt and sea salt with tender green herbs like cilantro or dill, or ground versions of tougher herbs like rosemary or tarragon. If necessary, thin with water or unsweetened soymilk, or other as per your Type.
- For Fruity Dressings, like Seedless Raspberry or Cherry, whisk in all-fruit jam or preserves. May need to add a bit of liquid sweetener to satisfy your tastebuds, and water to thin if necessary. If you can’t find seedless raspberry preserves, try thinning the preserves with water and pressing through a small sieve.
- For Protein Marinade, use Basic Dressing plus other combinations: tomato paste, garlic, and parsley, with compliant sweetener if desired; or, Italian herbs and olive oil with sea salt to taste. Shake to blend.
- For a ‘Pepper-Free’ Curry Blend (Type A’s like me often avoid pepper), use savory dried ground curry spices such as, turmeric, coriander seed, yellow mustard, ginger (my favorite four - go heaviest on the turmeric), but also occasionally add fenugreek, paprika, and/or cumin, all to taste. Use as a dressing for salad or sautéed veggies, or a marinade for stir-frying chicken or tofu. Variation: enhance with compliant nut butter.
- For Tuna or Salmon Salad, moisten drained canned tuna fish or salmon with Basic Dressing, a fair amount of olive oil, a lot of dried dill, with plain Greek yogurt to make it creamy.
- For a Skillet Sauce for Sautéed Portobello Mushrooms and Onions, add dried thyme and the Basic Dressing and simmer until reduced to intensify the lemon flavor.
- For Tofu Sandwich Spread, bake tofu, sprayed with Bragg’s Liquid Aminos, in an oiled baking dish for an hour at 350 degrees, turning once. When cool, grind in a small food processor and add Basic Dressing and olive oil until it hangs together and spreads easily.
- For Open-Faced Avocado Sandwich, top sprouted bread slice with thin layer of compliant cheese (like mozzarella or spreadable goat cheese), then sliced turkey (home-roasted or Applegate Farms antibiotic-free), then sliced or slightly mashed avocado. Drizzle Basic Dressing over all. Good without either the cheese or the turkey or both. :)
- I probably haven’t even remembered everything I do with this Basic Dressing. And you can probably think of more things yourself!
