Sauteed Vegetables with Rice Pasta

Ingredients:- 1/4 cup olive oil
- 4 cloves garlic crushed and peeled
- 1/4 cup chopped fresh parsley
- 2 portobello mushrooms thinly sliced
- 1/4 cup sherry
- 1 container firm tofu
- 1 small head radicchio washed and sliced
- 1 bunch spinach washed well and tough stems removed
- sea salt
- 1 pound rice pasta
- romano cheese
How to make it:- Boil water for the pasta
- In a very large skillet, heat the oil over low heat and gently cook the garlic, being sure not to darken the cloves
- Add parsley and cook 2 minutes
- Add mushrooms and cook until soft about 5 minutes
- Add sherry and cook about 1 minute to burn off alcohol
- Add tofu, radicchio, and greens
- Turn the greens over as they cook
- Cover and cook 10 minutes
- Season with salt to taste
- Meanwhile add the pasta to the water and cook according to directions
- Drain and rinse, then toss with a little olive oil
- Place pasta on the plate, then smother with vegetables
- Top with grated romano
- Serves 4
