In my efforts to find a use for rice flour, I came up with this tasty little number. It'll have you saying, 'wheat who?' and 'Helloooo Rice flour!' ;)

Ingredients:
  • 1-3/4 cups brown rice flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup brown rice syrup
  • 1/4 cup agave nectar
  • 3 ripe bananas mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup almond milk + 1 teaspoon white vinegar (or lemon juice)
  • 1 cup dried fruit (optional)
How to make it:
  1. Preheat oven to 325 degrees Fahrenheit
  2. Mix rice flour, baking soda, and salt in a large mixing bowl and set aside
  3. Mix brown rice syrup, agave nectar, bananas, applesauce, and almond milk/vinegar mixture in a medium mixing bowl until smooth
  4. Gently pour the wet ingredients into the dry and mix until lumps disappear
  5. Fold in the dried fruit
  6. Lightly grease a 9X5 bread pan and pour in the batter
  7. Bake for 1 hour and 10 minutes, or until a toothpick comes out clean
  8. Enjoy, you deserve it!
