Allergen-free Coffee Cake

Description:

A great coffee cake, free of the common allergens. Use for breakfast, dessert, snack, or as a flat bread or even pizza crust.For the cake: (if making flat bread or pizza crust, omit agave and topping. Add Italian seasonings if desired.)

Ingredients:
  • 1 cup millet flour
  • 1 cup brown rice flour
  • 1/3 cup sweet rice flour
  • 1 pkg. yeast (optional--for flavor only)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup water
  • 2 Tablespoons agave
  • 3 Tablespoons olive oil
  • 1 Tablespoon fresh lemon juice
  • 1/4 cup boiling water + 1 Tablespoon golden flax meal

  • For the topping:
  • 1/4 cup ground almonds
  • 1/4 cup brown rice flour
  • 1/4 teaspoon sea salt
  • 2 teaspoons ghee or oil
  • 2 Tablespoons agave
  • few drops water if necessary
How to make it:
  1. Mix dry ingredients.
  2. Mix liquid ingredients.
  3. Fix flax meal and water.
  4. Combine 2 and 3.
  5. Gently stir dry and liquid together.
  6. Pour into oiled pan.
  7. Sprinkle topping on.
  8. Bake at 350 degrees for about 20 minutes (depends on thickness of bread).
    Note:
    If making pizza, bake bread before adding toppings. Use 8X8' pan for coffee cake or a cookie sheet for flat bread or pizza crust.
