Allergen-free Coffee Cake

A great coffee cake, free of the common allergens. Use for breakfast, dessert, snack, or as a flat bread or even pizza crust.For the cake: (if making flat bread or pizza crust, omit agave and topping. Add Italian seasonings if desired.)
Ingredients:- 1 cup millet flour
- 1 cup brown rice flour
- 1/3 cup sweet rice flour
- 1 pkg. yeast (optional--for flavor only)
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3/4 cup water
- 2 Tablespoons agave
- 3 Tablespoons olive oil
- 1 Tablespoon fresh lemon juice
- 1/4 cup boiling water + 1 Tablespoon golden flax meal
For the topping:
- 1/4 cup ground almonds
- 1/4 cup brown rice flour
- 1/4 teaspoon sea salt
- 2 teaspoons ghee or oil
- 2 Tablespoons agave
- few drops water if necessary
How to make it:- Mix dry ingredients.
- Mix liquid ingredients.
- Fix flax meal and water.
- Combine 2 and 3.
- Gently stir dry and liquid together.
- Pour into oiled pan.
- Sprinkle topping on.
- Bake at 350 degrees for about 20 minutes (depends on thickness of bread).
Note: If making pizza, bake bread before adding toppings. Use 8X8' pan for coffee cake or a cookie sheet for flat bread or pizza crust.
