Description:

Sweet and creamy dip to serve as alternative to bean or yogurt dips.Can also be a great sauce with smoked mackerel or salmon.

Ingredients:
  • 5- 6 medium parsnips
  • 1 medium sized onion
  • 1 Tablespoon lemon juice
  • 1 teaspoon fresh ground black pepper
  • pinch crystal salt
  • 1/2 cup extra virgin olive oil
  • 1 pickled yellow or red pepper (optional)
  • 1 teaspoon brown sugar [or agave]
  • {mustard or garlic to taste)
How to make it:
  1. Steam or boil parsnips until soft.
  2. Combine all ingredients with the onion still raw into a food processor or blender and blend until smooth. For extra spicy version add clove of garlic raw, or teaspoon of English mustard.
