Parsnip Dip

Description:
Sweet and creamy dip to serve as alternative to bean or yogurt dips.Can also be a great sauce with smoked mackerel or salmon.
Ingredients:- 5- 6 medium parsnips
- 1 medium sized onion
- 1 Tablespoon lemon juice
- 1 teaspoon fresh ground black pepper
- pinch crystal salt
- 1/2 cup extra virgin olive oil
- 1 pickled yellow or red pepper (optional)
- 1 teaspoon brown sugar [or agave]
- {mustard or garlic to taste)
How to make it:- Steam or boil parsnips until soft.
- Combine all ingredients with the onion still raw into a food processor or blender and blend until smooth. For extra spicy version add clove of garlic raw, or teaspoon of English mustard.
