chicken and tomato curry

Description:

This all in one dish is a medium heat healthy twist on a curry!Easy to make and delicious to eat!

Ingredients:
  • 2 chicken breasts cut into bite size pieces [or turkey]
  • 4 onions, chopped roughly
  • 1 garlic clove chopped
  • 4 or 5 small white potatoes cut into quarters
  • 2 tins chopped tomatoes
  • 1 bay leaf (optional)
  • 1 vegetable stock cube
  • pich of:
  • ground cumin
  • ground ginger
  • mixed dried herbs
  • paprika
  • cayenne chili pepper
  • turmeric
How to make it:
  1. brown off bite size chicken pieces in a frying pan.
  2. roughly chop 3 onions
  3. quarter potatoes
  4. put in a large pan
  5. add all other ingredients (and some hot water if necessary throughout)
  6. stir occasionally on high heat for 10-15 minutes
  7. cover pan and put on low heat for 10-15 minutes stirring occasionally.
  8. (optional)take off heat and stir in 1 roughly chopped onion
  9. serve
