Beet Salad

This salad tastes better as it ages in the refrigerator, so make lots of it for the days ahead of you

  • Beets
  • finely chopped onion
  • thinly sliced celery
  • fresh parsley
  • olive oil
  • freshly squeezed lemon juice
  • sea salt
How to make it:
  1. Cook whole beets in a pot, covering with water
  2. When tender, turn off heat and allow to cool
  3. Slide the skins off the beets and slice into a bowl
  4. Add finely chopped onion, thinly sliced celery, fresh parsley
  5. Add olive oil and freshly squeezed lemon juice and salt to taste
  6. Stir and cool in the refrigerator
