Watercress salad

Ingredients:- watercress
- juice of one small lemon
- small amount of olive oil
- sea salt
- one medium clove of garlic, crushed
How to make it:- Chop one bunch of watercress (stems and all) and place into a bowl
- Add lemon juice to cress
- Add olive oil
- Add salt to taste – not too much!
- Add garlic
- Stir
Comment: This salad wilts very quickly, so it’s best made just before serving, or keeping the lemon/oil out of it until the last possible second.
