Ginger Cookies

Ingredients:
  • 1/2 cup oil [canola or olive oil]
  • 1/2 cup molasses
  • 1/3 cup agave or honey
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda, dissolved in 1 Tablespoon hot water
  • 3 cups rice flour
How to make it:
  1. Preheat oven to 350.
  2. Combine oil, molasses, agave, ginger, and salt in med. saucepan.
  3. Stir to mix, bring just to boiling.
  4. Remove from heat. Add baking soda/water.
  5. While foaming, add flour.
  6. Stir well and allow to cool slightly.
  7. Drop by rounded tablespoons onto greased pan.
  8. Bake 10 min. (do not overcook)
