Turkey Burger Soup

Description:

This recipe is easy, nutritious and great to have in the freezer. I like to make it for new mom's or ill friends.

Ingredients:
  • 1 pound ground turkey
  • 1 onion chopped
  • 1 green pepper, cut in strips
  • 1 cup sliced carrot
  • 1/2 cup diced celery
  • 3-4 cups sliced zucchini
  • 4 cups cut up tomatoes or canned tomatoes
  • 2 to 6 cloves chopped garlic
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon sea salt
  • dash of pepper
  • 6 cups of water or broth
  • 1 cup spelt pasta (any shape you like)
  • grated mozzarella cheese
How to make it:
  1. Brown meat in a large pot.
  2. Add water or broth, vegetables and seasonings.
  3. Bring to a boil.
  4. Cover and simmer for 1 hour.
  5. When vegetables are done to your liking, add pasta.
  6. Simmer for about 10 minutes.
  7. Serve sprinkled with grated mozzarella cheese.
