Olive Oil Mayonaise

  • 1 egg
  • 1/2 heaping teaspoon dry mustard
  • 1/4 heaping teaspoon salt
  • 1-1/2 Tablespoons lemon juice
  • 1 cup light olive oil (must use light or extra light)
How to make it:
  1. In a blender put in egg, mustard, salt and lemon juice. Blend in the olive oil in a slow steady stream.
