Irish Soda Bread 2

Description:

Irish soda bread is easy to make although a little heavy, so this recipe is an altered variation, made in the oven.

Ingredients:
  • 1 cup rice flour
  • 1 cup spelt flour [or kamut flour]
  • 1-1\2 cups rye flour [or BTD compliant flour]
  • 1\4 cup ground flax
  • 1\3 cup sugar [or BTD compliant sweetener, such as agave]
  • 1-1\2 teaspoons sea salt
  • 1-1\4 teaspoons baking soda
  • 2 cups soy milk [or BTD compliant milk]
How to make it:
  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients together.
  3. Mix in milk and sweetener.
  4. Pour into loaf pan and bake for approximately 1 hour, or until skewer comes out clean.
  5. When cool, slice and freeze.
