Pumpkin Cake

Description:

Delicious cake made with fresh pumpkin.

Ingredients:
  • 1-1/2 cups fresh cooked pumpkin (could be baked whole in oven the day before then scooped out and mashed)
  • 2-1/2 cups spelt flour [or BTD compliant substitute]
  • 1-3/4 cups sugar and 3 Tablespoons molasses [or agave]
  • 4 eggs
  • 1/2 Tablespoon baking soda
  • 2 Tablespoons baking powder [baking powder recipes]
  • pinch sea salt
  • 1 Tablespoon ground cinnamon
  • 1 Tablespoon allspice
  • 1 Tablespoon cardamom
How to make it:
  1. Preheat oven to 375 degrees F
  2. Mix wet ingredients together
  3. Then fold dry ingredients in and mix
  4. Bake 50-60 minutes (I used bundt pan, oiled and floured)
