Pumpkin Cake
Description:
Delicious cake made with fresh pumpkin.
Ingredients:- 1-1/2 cups fresh cooked pumpkin (could be baked whole in oven the day before then scooped out and mashed)
- 2-1/2 cups spelt flour [or BTD compliant substitute]
- 1-3/4 cups sugar and 3 Tablespoons molasses [or agave]
- 4 eggs
- 1/2 Tablespoon baking soda
- 2 Tablespoons baking powder [baking powder recipes]
- pinch sea salt
- 1 Tablespoon ground cinnamon
- 1 Tablespoon allspice
- 1 Tablespoon cardamom
How to make it:- Preheat oven to 375 degrees F
- Mix wet ingredients together
- Then fold dry ingredients in and mix
- Bake 50-60 minutes (I used bundt pan, oiled and floured)
