Carrot Cake Bars


What is there to say?

  • 1/3 cup organic canola oil or other allowed oil
  • OR 2 tablespoons plus 2 teaspoons Lighter Bake
  • 1/3 cup maple syrup or honey
  • 1/3 cup Turbinado (unrefined) sugar (optional)
  • 2 organic eggs
  • 1 cup finely shredded organic carrot
  • 1 teaspoon cinnamon
  • 1 cup oat flour, brown rice flour, or other allowed flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 tablespoons plain nonfat yogurt
  • 1/2 cup drained canned crushed pineapple (optional)
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup currants (optional)
How to make it:
  1. Preheat oven to 350F (175C)
  2. Oil a 13' by 9' baking pan
  3. In a large bowl, combine oil or Lighter Bake, maple syrup or honey, Turbinado sugar (optional) and eggs
  4. In a small bowl, combine flour, baking powder, baking soda, and cinnamon
  5. add to wet mixture
  6. Stir in yogurt, pineapple, carrots, walnuts and raisins, mixing thoroughly. Pour into prepared pan. Bake 25 to 30 minutes, or until a wooden pick inserted in center comes out slightly moist with crumbs
  7. Set on a wire rack and cool in pan
  8. Cut into 20 bars
  9. Sprinkle lightly with confectioner's sugar (optional). Store in refrigerator or freeze.
