Carrot Cake Bars

What is there to say?
Ingredients:- 1/3 cup organic canola oil or other allowed oil
- OR 2 tablespoons plus 2 teaspoons Lighter Bake
- 1/3 cup maple syrup or honey
- 1/3 cup Turbinado (unrefined) sugar (optional)
- 2 organic eggs
- 1 cup finely shredded organic carrot
- 1 teaspoon cinnamon
- 1 cup oat flour, brown rice flour, or other allowed flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 tablespoons plain nonfat yogurt
- 1/2 cup drained canned crushed pineapple (optional)
- 1/2 cup chopped walnuts (optional)
- 1/2 cup currants (optional)
How to make it:- Preheat oven to 350F (175C)
- Oil a 13' by 9' baking pan
- In a large bowl, combine oil or Lighter Bake, maple syrup or honey, Turbinado sugar (optional) and eggs
- In a small bowl, combine flour, baking powder, baking soda, and cinnamon
- add to wet mixture
- Stir in yogurt, pineapple, carrots, walnuts and raisins, mixing thoroughly. Pour into prepared pan. Bake 25 to 30 minutes, or until a wooden pick inserted in center comes out slightly moist with crumbs
- Set on a wire rack and cool in pan
- Cut into 20 bars
- Sprinkle lightly with confectioner's sugar (optional). Store in refrigerator or freeze.
