Jill's Chocolate Spelt Cake

A fantastic and deliciously moist chocolate cake.

  • 3-3/4 cups white spelt flour [or other compliant flour]
  • 1-1/2 cups sugar [or agave syrup]
  • 1/3 cup baking cocoa or carob powder
  • 2 teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 cups water
  • 3/4 cup olive oil or canola oil
  • 2 teaspoons vanilla
  • ghee to coat baking pan
How to make it:
  1. Combine first five ingredients in mixing bowl.
  2. Add water, oil, vanilla and mix well (batter will be thin).
  3. Rub Ghee inside a 9'x13' baking pan and pour batter in pan.
  4. Bake at 350F for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  5. Cool completely before cutting.
