Teriyaki Sauce

Description:

A mild sauce for salads, stir fries.

Ingredients:
  • 1/2 cup brown sugar [or 1/3 cup agave]
  • 5 Tablespoons wheat-free tamari sauce
  • 1 teaspoon ginger juice (see recipe below)
  • 1 slice ginger from ginger juice (see recipe below)
  • 1/4 teaspoon granulated garlic (watch for avoids)
How to make it:
  1. Place all ingredients in small saucepan.
  2. Simmer mixture, after it becomes heated, for 10 minutes.
  3. Stir so sweetener dissolves.
  4. Cool.
  5. Store mixture in a jar in the refrigerator until ready to use.

    Ginger Juice:

  6. Place some organic ginger cut into slices into a small saucepan (maybe 1/8 pound)
  7. Add filtered or bottled water just to cover slices (maybe 1 cup).
  8. Bring to a boil and let simmer for 10 minutes.
  9. Set pan aside for 12 hours.
  10. Bring to a boil again and let simmer for 10 minutes. Add more water if needed.
  11. Set pan aside for another 12 hours.
  12. Bring to a boil and let simmer for 10 minutes.
  13. Add more water if needed.
  14. Let mixture cool.
  15. Store slices covered with water in refrigerator until needed for cooking.
  16. Add more filtered water to cover slices so they don't dry out.

    Comments:

    I do it this way because I waste so much ginger trying to make ginger juice to flavor salads or stir fries. I also add ginger slices to cooking.
