Quick Chili Tuna Rice

Description:
A tasty south Asian influenced dish.
Ingredients:- per person:
- 2 cups rice
- 1 small tin tuna {or fresh fish / lamb/ beef if you have it}
- 1 cup of chopped and mixed:
- cucumber
- parsley
- basil
- mint
- onion or shallots
- dressing mix:
- juice of a lime
- Tablespoon date and nectarine chutney
- Tablespoon tamari
- Tablespoon olive oil
- 1 small green chili
How to make it:- cook rice, and on a plate arrange cucumber, tuna, onions with chopped herbs on top and hot rice on top
- Pour dressing over.
