Carrot Saute


Buying the new packages of shredded carrots makes this tasty side dish even easier.

  • shredded carrots
  • onions
  • jalapeno pepper, optional
  • cilantro
  • ghee or olive oil or both
How to make it:
  1. Saute first 3 ingredients in large frying pan until carrots are tender.
  2. Add cilantro last, cover pan, and cook on low for just a few more minutes.
  3. Add salt to taste.
  4. I was very surprised how good this was!
