Rice pie crust

Description:

Pie crust for pies, quiche, or casseroles.

Ingredients:
  • 2 cups cooked rice, white or brown
  • 2 eggs
  • 1 cup shredded cheese (mozzarella or farmer)
  • 1/4 cup sugar (omit for savory pie)
How to make it:
  1. Preheat oven at 350 F.
  2. Grease 10 inch pie pan.
  3. In a bowl mix all ingredients.
  4. Take 2/3 of the mixture and spread over bottom and sides of pan, pressing lightly to form crust.
  5. Fill pie shell with pie filling.
  6. Take remaining rice mixture, distribute evenly over top of pie (optional).
  7. Sprinkle sugar and spice on top when making a sweet version. [nons use a BTD compliant substitute]
  8. Bake for an hour.
  9. Let cool before cutting.
