Lemon Butter Biscuits

  • 250 grams raw sugar [or BTD compliant sweetener]
  • 375 grams wholemeal spelt flour {or BTD compliant flour]
  • 250 grams butter [or ghee]
  • 2-1/2 Tablespoons grated lemon rind or 1 teaspoon vanilla
How to make it:
  1. Melt butter.
  2. Mix in sugar, lemon rind, and flour, in this order.
  3. Kneed till it is well mixed and doughy.
  4. Roll out small balls and flatten on baking tray (I use baking paper, easy to clean up)
  5. Cook in oven at 210c for approximately 12 to 15 minutes, and allow to cool.
  6. Place in airtight container.
  7. Makes 24 biscuits.
