Tempeh Reuben


Vegetarian version of the hearty classic.

  • 8 ounces Tempeh
  • Rye bread
  • Swiss cheese
  • Sauerkraut
  • 2 Tablespoons Tamari (Soy Sauce)
  • Vegetable oil
  • Russian Dressing

  • 3 dollops mayonnaise
  • 1/2 tomato, peeled, seeded, and minced
  • spoonful Dijon mustard
  • spoonful or more horseradish
  • 1 ounce chopped green onions
  • dash cayenne pepper.
How to make it:
  1. Start by thinly slicing tempeh and browning in a little vegetable oil over medium heat.
  2. Prepare other ingredients while tempeh cooks.
  3. Mix Russian dressing ingredients.
  4. Warm 3-4 ounces sauerkraut in small saucepan.
  5. Toast 2 slices rye bread in toaster.
  6. When tempeh is almost done, add tamari and stir/flip. Take off heat immediately to avoid scorching.
  7. When toast is warmed, layer Russian dressing, 1 slice Swiss, sauerkraut, and tempeh.
  8. Broil for 1 minute under broiler, then serve.
  9. Delicious!
