Avocado Salad

Description:

Excellent salad next to rice and bean stew.

Ingredients:
  • 1 Avocado
  • 1 Cucumber
  • 1/2 Lime/lemon
  • few leaves of lettuce
  • few slices of red sweet pepper
  • salt to taste
  • fresh parsley flakes
  • finely diced red pepper (optional)
How to make it:
  1. Slice avocado in inch wide cubes.
  2. Peel and slice cucumber.
  3. Add lime, parsley and red pepper to the cucumber and toss. Add salt to taste.
  4. Add avocado and toss lightly.
  5. Serve on bed of lettuce.
  6. Garnish with slices of red sweet pepper
