Suzanne's Strawberry Bread


Breakfast bread

  • 3 cups flour (1 cup each of rye, kamut and oat) [or BTD compliant flour]
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 cup sugar [or BTD compliant sweetener]
  • 4 eggs, beaten
  • 2 cups frozen strawberries, thawed
  • 1 cup light olive oil (or grapeseed oil)
  • 1 cup tofu, cubed
How to make it:
  1. Preheat the oven to 350 degrees F.
  2. Combine all the dry ingredients.
  3. Combine the four moist ingredients.
  4. Mix the two together at medium speed for 2 minutes.
  5. Bake for one hour or until the bread begins to pull away from the sides of the pans.
  6. Makes two loaves.
