Kamut (Oat, Buckwheat) Banana Bread

Description:

A modified banana bread recipe from the Wycliffe International Cookbook.

Ingredients:
  • 3/4 cup sugar [or BTD compliant sweetener]
  • 1/4 cup water
  • 1 to 2 eggs, beaten
  • 2 to 3 bananas
  • 1 teaspoon lemon juice, optional
  • 2 cups flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon, cloves, or nutmeg
  • 1 teaspoon vanilla
  • 1/2 to 1 cup chopped nuts, optional
How to make it:
  1. Preheat oven to 375 degrees F.
  2. Combine wet ingredients in a bowl.
  3. Combine dry ingredients in a separate bowl.
  4. Add wet to dry ingredients, and mix.
  5. Pour into 9x9 loaf pan or into muffin tins.
  6. Bake for 45 to 60 minutes or until a toothpick comes out clean.
