Kamut (Oat, Buckwheat) Banana Bread
Description:
A modified banana bread recipe from the Wycliffe International Cookbook.
Ingredients:- 3/4 cup sugar [or BTD compliant sweetener]
- 1/4 cup water
- 1 to 2 eggs, beaten
- 2 to 3 bananas
- 1 teaspoon lemon juice, optional
- 2 cups flour
- 1/2 teaspoon sea salt
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon, cloves, or nutmeg
- 1 teaspoon vanilla
- 1/2 to 1 cup chopped nuts, optional
How to make it:- Preheat oven to 375 degrees F.
- Combine wet ingredients in a bowl.
- Combine dry ingredients in a separate bowl.
- Add wet to dry ingredients, and mix.
- Pour into 9x9 loaf pan or into muffin tins.
- Bake for 45 to 60 minutes or until a toothpick comes out clean.
