Mashed Parsnips

Description:

They look like white carrots but taste like a cross between carrots and potatoes. They have a sweet taste and go good with meat and other veggies.

Ingredients:
  • parsnips
  • ghee (clarified butter)or butter
  • salt
  • garlic powder
  • onion powder
  • parsley
How to make it:
  1. Scrub parsnips and clip off the ends.
  2. Cut into slices with a large flat bladed sharp knife and cutting board (they are rather hard to cut).
  3. Steam parsnips (covered) until tender.
  4. Mash slightly.
  5. Add Ghee or butter and desired spices.
  6. Finish mashing and whipping with electric mixer.
  7. Serve instead of potatoes.
