jicama, bean, tomato, zucchini salad
Ingredients:- 1 cup onion
- chopped 4 plum tomatoes coarsely chopped
- 2 cups jicama, diced small
- 1/2 each red, yellow and orange pepper,diced
- 2 cup zucchini, diced
- 1 cup green beans, cut into 1/2' pieces
- 1 cup yellow beans cut into 1/2' pieces
- 1/2 cup veggie stock or water
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1/2 teaspoon curry
- sea salt (optional)
How to make it:- Cook onion, tomatoes and jicama in heavy pot until softened
- Add peppers, zucchini and beans and cook over medium heat, stirring for 5 minutes
- Add stock/water, chili powder, oregano, curry and salt and simmer for 10 minutes
- Serves 4-6
- This recipe was traditionally made with corn and I substituted it with jicama since it has such a nice sweet, crunchy taste to it.
