jicama, bean, tomato, zucchini salad

Ingredients:
  • 1 cup onion
  • chopped 4 plum tomatoes coarsely chopped
  • 2 cups jicama, diced small
  • 1/2 each red, yellow and orange pepper,diced
  • 2 cup zucchini, diced
  • 1 cup green beans, cut into 1/2' pieces
  • 1 cup yellow beans cut into 1/2' pieces
  • 1/2 cup veggie stock or water
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon curry
  • sea salt (optional)
How to make it:
  1. Cook onion, tomatoes and jicama in heavy pot until softened
  2. Add peppers, zucchini and beans and cook over medium heat, stirring for 5 minutes
  3. Add stock/water, chili powder, oregano, curry and salt and simmer for 10 minutes
  4. Serves 4-6
  5. This recipe was traditionally made with corn and I substituted it with jicama since it has such a nice sweet, crunchy taste to it.
