Zucchini Muffins

Muffins teenagers like!

Ingredients:
  • 3 eggs
  • 1 cup oil
  • 1 cup sugar
  • 1/2 cup honey
  • 2 teaspoon vanilla
  • 2 cups grated raw zucchini
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/4 teaspoon baking powder
  • 1 cup spelt flour
  • 1 cup rice flour
  • 1 cup rye flour
How to make it:
  1. Beat eggs, oil, sugar, honey, and vanilla together.
  2. Add the zucchini.
  3. Add dry ingredients in the order listed.
  4. Bake at 350 degrees until the muffins begin to pull away from the sides of the pan.
  5. Makes 2-1/2 to 3 dozen regular muffins.
  6. (Note about flour. The original recipe that I altered called for 3 cups of wheat flour. I used this combination of three flours for my O&A family. The texture was very nice. I expect other flour combinations adding up to 3 cups would also work.)
