Description:
Kale, Black-eyed peas, & onion
Ingredients:- 1 large onion
- oil (I used grapeseed because it tolerates heat well) one package frozen black-eyed peas (16 oz)
- one bunch of fresh kale salt
How to make it:- Chop the onion. In a very large pot (I used an 8 quart pot)
- cook the onion in the oil until it is translucent
- Add 1 cup water and the black-eyed peas.
- Bring to a boil
- then reduce heat and cook 20 minutes
- Pull the leaves off the kale stems (I save the stems for juicing later)and tear them into bite sized pieces
- Add them to the pot
- Stir occasionally until the kale is wilted
- Cover and cook until the kale is tender
- Salt to taste.
