Lentil Tacos

Ingredients:
  • 1 Tablespoon olive oil
  • 1 clove garlic, chopped
  • 1 small onion
  • 2 cans lentils, rinsed
  • corn tortillas
  • feta cheese
How to make it:
  1. Saute the garlic and 1/2 of the onion in olive oil until not quite brown (I like mine a bit on the crunchy side). Rinse and add lentils and stir.
  2. Cover and heat until finished.
  3. Warm the corn tortillas and fill with the lentil mixture. I like to chop up the other half of the onion and use it to top my tacos.
  4. Sprinkle with feta cheese and enjoy!
