Lemony Jerky


Beef (or other meat) jerky recipes, from The Lightweight Gourmet Alan Kesselheim.


    Lemony Jerky I
  • 2 Tbs fresh lemon juice
  • 1/4 tsp black pepper (optional)
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 lb meat sliced
    Lemony Jerky II
  • 1 cup pineapple juice
  • 2 cloves minced fresh garlic
  • 2 tsp soy or tamari sauce (optional)
  • 2 tsp fresh lemon juice
  • 1 lb meat sliced
How to make it:

    Lemony Jerky I
  1. Mix first four ingredients.
  2. Add meat.
  3. Cover and refrigerate 2 to 4 hours before drying.
    Lemony Jerky II
  4. Mix first four ingredients.
  5. Add meat.
  6. Cover and refrigerate 2 to 4 hours before drying.

    Note: Can also make jerky from:
  7. *Lamb: use leg or shoulder cuts.
  8. *Fish: Whitefish is good dried, especially if marinated in a lemon or soy sauce first. In general, the less oily fish dry best. Clean fish and fillet into thin strips before drying.
  9. *Slices of cooked turkey, marinated if you like, dried until not quite brittle.
