Ingredients:
  • 1/3 cup brown sugar [or 1/4 cup agave]
  • 1/3 cup white sugar [or 1/4 cup agave]
  • 1/3 cup olive oil [or ghee]
  • 1/2-3/4 cup crushed pineapple -- juice drained
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking powder [Baking Powder Recipe Variations]
  • 1 teaspoon vanilla [optional]
  • 1/2 cup chopped walnuts
  • 2 cup spelt flour [or BTD compliant flour]
How to make it:
  1. Preheat oven to 350 degrees F
  2. Combine all ingredients together.
  3. Lightly grease a cookie sheet with olive oil [or ghee].
  4. Drop by spoonfuls onto cookie sheet.
  5. Bake for 15 - 20 minutes or until golden brown.
  6. Enjoy!!!
