Figs with Ginger

Description:

Dried white figs stewed with crystallized ginger.

Ingredients:
  • 8 ounces dried Greekor Middle Eastern white figs (the tiny 'Shiraz' if you can find them are truly gourmet)
  • 2 teaspoons finely julienned crystallized ginger
  • water to cover dried figs
How to make it:
  1. Wash and drain figs to remove any debris.
  2. Place them in a saucepan with the ginger.
  3. Pour in enough cold water just to cover.
  4. Bring to a boil then turn heat to simmer.
  5. Simmer uncovered approximately 45 minutes, or until the figs are plump and soft but still retain their shape. The water should be reduced to the consistency of pancake syrup.
  6. Stir gently two or three times during the cooking.

    Comments:

  7. Pour one or two tablespoons of this yummy treat over
  8. 1/2 cup of one of the following, according to what is permitted for your blood type:

  9. whipped mild goat cheese;
  10. whipped heavy cow's or goat's cream;
  11. softened cream cheese;
  12. ricotta cheese;
  13. kefir cheese;
  14. sour cream;
  15. vanilla ice cream;
  16. cow's or goat's milk yoghurt;
  17. soymilk yoghurt.
