Greek Salad with Lemon Dressing

Description:

Yummy way to eat your greens with a non-vinegar/non dairy dressing

Ingredients:
  • Greek Salad:
  • 1 head romaine/leaf lettuce or spinach
  • 1 cucumber sliced [optional]
  • 1/2 cup feta cheese

    Lemon Dressing

  • 1/4 cup olive oil
  • 2 Tablespoons lemon juice
  • 1 Tablespoons Dijon mustard
  • 1/2 teaspoon sugar [or agave]
  • sea salt and pepper to taste
How to make it:
  1. Combine torn lettuce or spinach with sliced cucumber top with feta cheese.
  2. Meanwhile combine dressing ingredients and shake well.
  3. Pour dressing over salad and toss.
