Greek Salad with Lemon Dressing
Description:
Yummy way to eat your greens with a non-vinegar/non dairy dressing
Ingredients:- Greek Salad:
- 1 head romaine/leaf lettuce or spinach
- 1 cucumber sliced [optional]
- 1/2 cup feta cheese
Lemon Dressing
- 1/4 cup olive oil
- 2 Tablespoons lemon juice
- 1 Tablespoons Dijon mustard
- 1/2 teaspoon sugar [or agave]
- sea salt and pepper to taste
How to make it:- Combine torn lettuce or spinach with sliced cucumber top with feta cheese.
- Meanwhile combine dressing ingredients and shake well.
- Pour dressing over salad and toss.
