Ingredients:
  • 3 Tablespoons olive oil
  • 1 medium onion pealed and chopped
  • 1 Tablespoon fresh ginger sliced
  • 4 cloves garlic chopped
  • 1 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/8 teaspoon cayenne {optional}
  • 2 medium potatoes peeled and diced
  • 1/2 pound cauliflower florets
  • 5 cups vegetable broth
  • 2/3 cup 1/2 and 1/2 {optional}
How to make it:
  1. Heat oil in a large pot and cook onion, ginger and garlic for a few minutes.
  2. add spices stir then add vegetables and broth.
  3. Boil slowly for 10 minutes covered or until potatoes are tender.
  4. Blend in blender or pot.
  5. Add cream if desired and reheat.
